Sausage Vegetable Bake

Hello! I have a very quick, easy and tasty meal for you today. I’m not usually a big fan of one-pan dinners but this one was terrific and my family really enjoyed it…even going back for seconds…and taking the leftovers for lunch the next day!  🙂

This “recipe” calls for lots of vegetables & smoked sausage, mixed with fresh herbs and extra virgin olive oil. It’s all tossed together on one parchment-lined pan. Quick prep time and insanely quick clean-up…definitely a plus!!

Start with any brand frozen mixed vegetables…I prefer Kirkland Stir Fry Vegetables – from Costco, 1 package any flavor precooked sausages, extra virgin olive oil, some herbs and spices, salt and pepper…

You’ll need 2-3 yellow or red potatoes if not included in your vegetable blend. Quarter the red potatoes, chop the other vegetables into bite sized pieces if needed,  and cut the sausage into medium thick slices. Run your knife through the fresh herbs.

Preheat oven to 400 degrees.

Line a sheet pan with parchment paper and drizzle with olive oil.

Place all the veggies and sausage into a large bowl and toss with salt, pepper and fresh herbs, then drizzle with olive oil. Toss to evenly coat all the vegetables and sausage. Place the vegetable mixture on the parchment-lined pan and drizzle with more olive oil.

Bake 10-12 minutes, toss all the veggies around. Bake for another 10-15 minutes or until vegetables are crisp tender and sausage is heated through.

We apparently were ready to eat because I forgot to get a picture of the roasted vegetable bake when it was plated. It was terrific!

Ingredients

  • 1/2 bag Kirkland frozen Stir Fry Vegetables
  • 1 pkg precooked smoked sausage, any flavor (apx 4 links)
  • 2-3 yellow or red potatoes, quartered
  • 3-4 Tbsp olive oil
  • fresh thyme and rosemary
  • 2 Tbsp Trader Joe’s 21 Seasoning Salute
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
